Honey Glazed Grilled Halloum Cheese Sandwich

Ingredients
  

  • 100 g Halloum
  • 0.5 tbsp Honey
  • 0.5 tbsp Lemon Juice
  • 0.25 tsp Chilli flake
  • 0.5 tsp Thyme
  • 1 tbsp Olive oil
  • 1 piece Avocado, ripe
  • 0.5 cup Arugula
  • 0.5 piece Tomato, thinly sliced
  • Salt and black pepper to taste
  • 1 piece Ciabatta bread

Instructions
 

  • Cut Puck Halloumi Cheese into 3-cm slices.
  • In a bowl, mix the honey, lemon juice, chili flakes, thyme, salt, and pepper.
  • Add the cheese to the marinade and set aside for 5 minutes.
  • Cut the ciabatta bread open and toast it until it is slightly crispy and golden.
  • In a non-stick pan over medium-high heat, add the olive oil and sear the halloumi cheese until it is golden on both sides; this will take about 2 minutes. Add the remaining marinade back over the cheese in the pan, remove from heat, and set aside.
  • Mash the avocado and spread it evenly over one side of the bread. Season with salt and pepper. Add some arugula and tomato slices over the avocado.
  • Place the grilled halloumi over the veggies and close the other part of the bread over it. Cut the sandwich in half, serve, and enjoy!
